Buttermilk Coconut Pie Recipe

Ingredients:

  • 6 Laysan Bay Farm organic eggs (slightly beaten)
  • 2 cups sugar (can use sugar substitute-follow conversion on bag)
  • 1 stick butter (melted)
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 7oz. bag coconut flakes
  • 2 regular pie shells

Directions:
Step 1: Mix together eggs, sugar and melted butter until blended
Step 2: Add vanilla and buttermilk to the mixture and mix
Step 3: Add coconut to mixture and mix until well blended
Step 4: Pour into 2 regular pie shells.

Bake at 350 degrees for approximately 1 hour or until middle is firm. Cool before serving. Great recipe to make a day ahead.
