- 1 dozen hard-boiled Laysan Bay Farm organic eggs
- 1/4 to 1/3 cup mayonnaise (depending on personal preference for moistness)
- 1 dash of yellow mustard
- 2-3 tbsps. sweet pickle relish (depending on personal preference for sweetness)
- 1 tsp of pickle juice
- Salt & Pepper to taste
Step 1: Boil eggs for 13-15 minutes. Remove the eggs from the pan and place them in cold water. Let them cool for 5 minutes. Carefully crack the egg shell and remove.
Step 2: Slice eggs in half lengthwise and remove yolks; Arrange whites on a serving platter.
Step 3: Mash yolks with a fork in a small bowl. Stir in mayonnaise, mustard, pickle relish and pickle juice. Add salt & pepper to taste.
Step 4: Place egg yolk mixture in small Ziploc bag and cut off small corner of bag. Pipe egg yolk mixture into egg whites.
Step 5: Refrigerate until serving.
